Kale and Quinoa Salad with Lemon Vinaigrette
This is a nutritious salad that highlights two popular healthy ingredients in the U.S.: kale and quinoa.

Ingredients:
2 cups kale, chopped
1 cup cooked quinoa
½ cup cherry tomatoes, halved
¼ cup cucumber, diced
¼ cup red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions:
In a large bowl, combine the kale, quinoa, cherry tomatoes, cucumber, and red onion.
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
Pour the dressing over the salad and toss well.
Let the salad sit for 10-15 minutes to allow the flavors to meld before serving.
