Kale and Quinoa Salad with Lemon Vinaigrette

This is a nutritious salad that highlights two popular healthy ingredients in the U.S.: kale and quinoa.

Ingredients:

  • 2 cups kale, chopped

  • 1 cup cooked quinoa

  • ½ cup cherry tomatoes, halved

  • ¼ cup cucumber, diced

  • ¼ cup red onion, thinly sliced

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the kale, quinoa, cherry tomatoes, cucumber, and red onion.

  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the salad and toss well.

  4. Let the salad sit for 10-15 minutes to allow the flavors to meld before serving.
